About a year ago I was invited to my friends home to process the meat from my deer into Venison Bacon. Upon arriving they said they had just finished smoking some Jalapeño Cheddar Kielbasa, Bologna and Hot Sausages using their home made spice recipes. I sampled everyone of them fresh out of the smoker, and loved them all. My favorite is the Jalapeño Cheddar Kielbasa! While I was there they made Venison Bacon with my deer meat, and I was thrilled with how it turned out.
